Pumpkin Pancakes

Hey, my loves! I started this morning with some healthy pancakes. They taste so good and they are so easy to make! As you can see I always like to have some fruits on the plate too. And sometimes I even put on maple leaf syrup. I know this is something you should always add to pancakes, but I try to eat as sugar-free as possible. And therefore I always have fruit next to my pancakes. And of course, the pancakes themselves are sugar-free. The sweet taste I added with pumpkin spice. I’m trying to finish this huge pumpkin I still have since October…


For nine this size you’ll need:

  • 240 ml Milk (I usually use soy milk)
  • 140 g Flour (I take gluten free corn flour)
  • 140 g Pumpkin purée
  • 2 TSP Baking soda (I always take the gluten fee version here too)
  • 1/4 TSP Salt
  • 1 TSP Cinnamon
  • 1 TBSP Lemon juice
  • 1 TBSP Coconut oil
  • Fruit & maple leaf syrup for serving


I start with two bowls. In one I mix up the dry ingredients like flour, salt, baking soda and cinnamon and in the other the “liquid” ingredients like the purée, lemon juice, and milk. Then I mix the ingredients together. And sometimes I have to add water or some more milk if it’s too dry. I let the dough rise for about 10 minutes. And then I put it in the frying pan with coconut fat. 1-2 minutes on each side and we are done! 😉
