Corn, Lentils & Daisy Salad

Oh yes, you got it. It’s spring and soon summer so I’m super in a salad mood. Salad always works perfectly in spring and summer, haha. So here is one I want to share with you. I know there is no green in it because I honestly not really in love with green salad. So that’s my kind of thing. It’s super easy and I always do it when I want to have something, but fast. This salad also works super if you don’t have anything left in the fridge since you don’t need much. But here is what I use for it:

  • Corn
  • Lentils
  • Daisies (as decoration, but you can also eat them. I like them a lot)
  • Pepper
  • Salt
  • Olive oil
  • Mayonnaise

And don’t forget about hunger, haha. So there are two things I want to mention when it comes to the mayonnaise. First, add a lot of mayonnaise, as more as better. Secondly, in order to do the first thing without feeling super guilty have a look at buying good mayonnaise. What I mean by this is, buy one without sugar or chemicals. Because that’s pretty common. I always buy swiss bio mayonnaise which is free of all these things. Luckily! If you can’t find something like this make it yourself. If you don’t know how, leave a comment down below and will make a post about this!;-) But anyway, I don’t think that I need to mention a lot on how to prepare this salad. Just throw all the things above in a bowl, mix it, try it, add more of something or everything, try it again unless you like it. Add the daisies add the end, so they look better!;-) The good thing about this salad is you can throw in all the things you have left. Some brainstorming on that: Quinoa, avocado, tomatoes, greek cheese, carrots, green salad, fish, cucumbers, etc. Have fun!;-)
