Apple & Coconut Patties

The other day I was hungry as always, haha. But we didn’t have much left at home. So I was forced to be a little creative with the things we had left. So I’ve created these cookies (?). Don’t really know how to call them. Because they are not as cross as cookies. So let’s just call them “Sweet Patties”. And yep, as always: It’s simple and it’s healthy. All sugar- free as always. And gluten-free as most of the time.:-)) So you’ll need…

  • 200g Coconut rasps
  • 2 Apples
  • 3 Eggs
  • Orange and or citron zest
  • 2TSP Baking soda
  • 2TSBP Coconut oil

Important Tip: Always when you work with eggs and coconut oil, start with melting the coconut oil so you can let it cool down until it reaches the room temperature before you mix it. Because otherwise, when you mix it right away, the egg will get hard.

So start with the melting the coconut oil. Mean while you can rasp the apple and mix it with the coconut rasps. But in the orange/citron zest, baking soda, and eggs. Mix everything gently. Finally, mix it with the cooled down coconut oil. The texture won’t be doughy. It will more feel like a puree. Put baking paper on your sheet and put blobs of the puree on it in the sizes you want. You can shape it out on the sheet. If you want to do shapes like hearts etc. use cookie shapes, place them on the sheet with the baking paper on top of it and fill it the shape with the puree. Make sure that you press it a little together to make it stick. Let it in the oven for 30 minutes by 210 degrees Celcius. But have a look once in a while. Because it all depends on the thickness… You can variate the sweetness with the kind of apples you use.;-) I wouldn’t recommend adding orange juice or maple leaf syrup for the sweetness tho. As this mixture/puree already is very moist. By the way, these are very satisfying. And because they are super healthy you don’t have to feel guilty if you actually enjoy them as a whole meal!:-P<3
